Three Healthy Desserts For a Party Potluck

Swap the Christmas cake for a lighter option without compromising on taste, thanks to these delicious recipes from Paris’ go-to healthy hotspot Wild & the Moon and wellbeing center Sha Wellness. Let the foodie festivities begin.

1. Wild & the Moon’s banana cake

Ingredients (serves 10):

150g rice flour

100g grated coconut

50g buckwheat flakes

1 pinch of cinnamon

1 pinch of vanilla

50g hazelnuts

1kg bananas

150ml almond milk

125ml maple syrup

30g chia seeds

Method:

“1) Preheat the oven to 175°C. 2) Mix the chia seeds with the almond milk. 3) Peel and mash the bananas with the spices. 4) Add the hazelnuts and maple syrup. 5) Lightly combine and add the chia seed and almond milk mixture. 6) Add the dry ingredients then pour into a mould of your choice. 7) Bake for 45 minutes. 8) Allow to cool, then dig in.”

2. Sha Wellness’ crumble

Ingredients:

2 cups whole flour

½ cup cornmeal

½ teaspoon salt

½ cup warm coconut oil

½ cup rice syrup

½ teaspoon baking powder

1 cup roasted chopped nuts.

4 cups of fruit (apples, plums, red berries and peaches)

1 cup apple juice

1 pinch of sea salt

1 teaspoon maple syrup

Method:

“1) Preheat the oven to 250°. 2) Place the fruit in an ovenproof dish then add the apple juice, the pinch of salt and tablespoon of maple syrup. 3) In a bowl, mix together the flour, the baking powder, the nuts and the sea salt. 4) In another smaller bowl, whisk the melted coconut oil with the rice syrup until completely combined and then pour into the flour and nuts mixture. 5) Crumble the dough over the fruit. 7) Cover and allow to cook for 20 minutes. 7) Uncover and allow the top to golden for 5 minutes.”

3. Wild & the Moon’s matcha energy bar

Ingredients:

70g cashew nuts

70g pistachio nuts

130g of dates

1 teaspoon of matcha powder

1 pinch of sea salt

20g of coconut flakes

1 pinch of vanilla

1 teaspoon of date syrup

Method:

“1) Chop the cashews, pistachios and dates. 2) Add all other ingredients and mix until a thick paste forms. 3) Flatten the mixture before molding it into the final shape you want for your bar. 4) Place in the freezer for a few hours so that it has a nice crunch, then all that is left to do is to taste it.”
